If you let the pods mature you get green mottling showing through. Having said that the colour retention on cooking, particularly of the young pods, is very good.
Wow! Still picking Shiraz! My plants were a favourite of pigeons this year so I only had a few to eat sadly

DeleteThat variety looks interesting. Does it stay purple when cooked? Our Oregon Sugarsnaps did quite well this year.
